Live examples: By combining benchmarking and labour scheduling tools, Binley Drake have helped T&C significantly reduce costs
In October 2008 Martyn Drake of Binley Drake Consulting was engaged by Town and City Pub Company to help improve profit conversion.
Following a series of reviews and analysis of trading profiles and cost data, a number of key actions were agreed with the Finance and Managing Directors.
A suite of analysis and planning tools were developed to link in with the existing systems, allowing site managers to more effectively plan their staffing rotas, in line with targets agreed with Area Managers. Further tools were also developed for the team to easily extract trading profiles and compare them with staffing profiles, to disseminate and to collate schedules for performance reporting, and to measure the improvement at a site level.
Benchmarking data, performance insights and site-by-site targets were then reviewed in 1:1 coaching sessions with senior operators to agree realistic savings targets and clear delivery plans.
All of this has resulted in Town and City significantly reducing their labour bills by targeting staffing levels far more effectively against their trading profile, delivering material cost improvements - essential in today's tough trading environment.
